Married Life

Since the wedding and honeymoon, I was so happy to find that life went back to the way it was before the engagement! It was such a high-stress time for both of us - add in 2 full time jobs, a full time student, a dog, living away from family, and an important election and you get a lot of stress! We have been relaxing and enjoying just hanging out! We have been slowly working on getting gifts out and in places (our apartment is somewhat small). I just started classes Monday, but have just been doing orientation type things. Today, we got our wedding pictures back :) They are absolutely amazing! Thank you to the amazing Deckard Photography! Here are some of my favorites!

I am so pleased with them! They are all sooooo good!

I have been dealing with insomnia the last week as my body is trying to get back onto a normal schedule as opposed to night shift. Not fun! Especially when you have class! Well, we have a Netflix disc for our Wii that has all free TV shows and movies on it! So, I have started watching 'The Little Couple' on TLC. I really like it. They are both so successful and I think it is so great. This week, I also started watching a new show on TLC called 'Quints by Surprise' which I love. They are such normal, hardworking, and again successful people! I love to see them. 'The Real Housewives of New Jersey' reunion was this week and I just love that stuff! I can't get enough and I am not sure why - I just think it is so crazy how much drama they have in their lives! I cannot imagine living with that drama - I could totally live in Franklin Lakes though ;).

I made a new recipe for dinner the other night which was nice - we get in a rut of having the same things over and over. I actually have made 2 recipes recently!

White Chicken Enchiladas

Ingredients:
1 can Healthy Request cream of chicken soup
About 1 to 1-1/2 lbs chicken breast, cooked and shredded (I bought 2 cans of chicken and used it!)
1 small can mild green chiles
8 oz. sour cream - I used fat free - normally don't like it but can't tell because it gets mixed in!
10 tortillas - I used 100% whole wheat
Shredded Monterey Jack cheese

Preheat oven to 350. Combine everything except cheese and mix well. Spoon into tortillas, roll, then place seam side down in 9 x 13 baking dish. Continue until all are complete. Sprinkle cheese over the top, cover with aluminum foil, and bake for 20 minutes. Remove the foil, then bake for another 10 minutes.

Super good, super fast, and super easy!

The other recipe can be found here: Three Cheese Chicken Penne Pasta Bake

I think that is it for now. If anyone reads and tries these recipes, let me know what you think!
